Ingredients

  • 2 cups tapioca starch
  • ½ cup coconut flour
  • ½ cup flaxseed meal
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 6 eggs
  • 2 tsp maple syrup or honey
  • ½ cup oil (olive oil, coconut oil or melted ghee)
  • ¼ cup nut milk of your choice
  • 1 tbsp + 1 tsp apple cider vinegar
  • Pinch of salt

Instructions

  • Preheat oven to 350 degrees
  • Grease a loaf pan with oil or line with parchment paper
  • In a medium sized bowl, combine the eggs, maple syrup, oil, nut milk and apple cider vinegar. Whisk until combined
  • To the same bowl, add the tapioca starch, coconut flour, flaxseed meal, baking powder, baking soda, and salt. Mix until completely combined
  • Pour the bread batter into the greased loaf pan and place in the oven. Bake for 45 minutes or until the top of the bread is crusty and golden brown. If you touch the center of the loaf, it should feel hard and hollow- that's how you know it's baked
  • Once baked, remove from the oven and allow to cool for 10-15 minutes before cutting
  • Once cut, smear on a slab of butter and enjoy!
