Mango Goji Berry Energy Bites

- 1 cup dried mango, packed
- ¼ cup goji berries
- ¼ cup unsweetened shredded coconut plus extra for rolling
- 8 medjool dates, pitted
- 2 tbsp hemp seeds
- ½ cup raw cashews
- ½ cup raw pumpkin seeds
- optional: 24-36 drops NuVita Full-Spectrum CBD Oil
Place the mango and goji berries in a small bowl and cover with warm water. Allow them to soften for about 5 minutes
Next, drain the mango and goji berries and layout on a plate, and pat dry with a paper towel. Once dry, add to a food processor with the remaining ingredients. If you are adding NuVita CBD, also add the desired amount at this time. Process until all the ingredients are well incorporated.
Place some shredded coconut on a plate. Scoop out about two tablespoons of the energy bite mixture and roll into a ball then roll in the coconut. Set aside and continue with the rest of the mixture. Place in an air safe container in the refrigerator for up to a week or in the freezer for up to two months. Enjoy!
