  • Line a mini muffin tin with mini muffin papers and set aside. Place the chocolate chips in a heat-safe bowl and melt in the microwave or over a double boiler. Once melted, use a spoon and pour a small amount into each mini paper, about 1 tsp. Using the spoon, work the chocolate around the muffin paper. Once they are all coated in chocolate, place the tin in the fridge and allow it to cool.
  • Place the coconut butter in a small saucepan and gently heat over low heat, stirring every 30 seconds or so. Once melted, remove from the heat. Process the freeze-dried strawberries using a food processor until they turn into a fine powder. Pour them into the melted coconut butter and stir. Remove the chocolates from the fridge and add 1 tsp of the strawberry mixture into each cup. Next, add melted chocolate on top making sure to cover the strawberry filling.
  • Sprinkle some chopped up freeze dried strawberries on top (optional) and then place back into the fridge for about 15 minutes or until the chocolate is hard. Enjoy!
