    Grain-free Pumpkin Spice Granola is full of the oh so popular pumpkin spice and is naturally sweetened with maple syrup. The recipe comes together with a few simple ingredients and in less than an hour. You'll be enjoying this autumn granola for breakfast or a snack in no time!

    There is a definite hype around pumpkin spice everything once Labor Day has come and gone. Although I do enjoy pumpkin spice, the pumpkin spice flavor I find in lattes and desserts is so over powering and so sweet. If you're like me, you will not be disappointed in this grain-free pumpkin spice granola. It has the taste of pumpkin with a hint of cinnamon and other fall spices while not being overwhelmingly sweet.

    A couple notes about Grain-free Pumpkin Spice Granola:

    My first attempt at making this granola did not turn out so well. Instead of being crunchy and full of flavor, it was bland, soggy, burnt in spots (I may have forgotten about stirring it...opps!). It was a big time bummer. But that's life and that's the reality of recipe development.

    Let's talk about the oven:

    I found that cooking the granola at a low temperature and for a longer period of time results in a granola that's crunchy. The key to making sure this recipe turn out is to remove the baking tray from the oven and stir every 10-15 minutes. This allows for the mixture to dry out and crisp up. Ovens do not distribute heat evenly regardless if it's a brand new oven or not. Stirring the granola will not only help it dry out, but will help move the nuts around from hot spots in the oven preventing burning.

    How should I store leftover granola?

    I recommend storing any leftover granola in a glass mason jar with a lid. This will help the granola stay crunchy for up to two weeks in the cupboard.

    Ingredients

    • 2 cups pecans, chopped
    • ½ cup pumpkin seeds
    • 1 tbsp flaxseeds
    • 1 tbsp chia seeds
    • ¼ cup maple syrup
    • ½ cup pumpkin puree
    • 4 tbsp ground cinnamon
    • ½ tsp ground nutmeg
    • ½ tsp ground ginger
    • ½ tsp ground cloves
    • ½ tsp ground cardamon
    • ¼ tsp allspice
    • ½ tsp salt

    Instructions

    • Preheat oven to 325 degrees
    • In a medium sized bowl, combine all ingredients and stir until combined
    • Spread the granola mixture out on a parchment paper lined baking tray
    • Total baking time will take around 45 minutes. Remove the granola from the oven every 10-15 minutes and stir. This will ensure that the granola drys out evenly and becomes crunchy
    • Allow the granola to cool completely before enjoying!
