Mint Smoothie is a McDonald's classic copy cat. It is minty and refreshing. Top it off with some raw cacao nibs you have one of my favorite ways to start the day. You would never know the bright green color is from spinach. A sneaky little way to add in a few extra greens to your daily diet.
Who else is as excited for St. Patrick's Day as me?! I'm sure you can guess why I like this holiday so much. Yup, the food! Corned beef, sauerkraut, cabbage, and potatoes are some of my favorites. This year I wanted to lighten the traditional food scene a bit and decided to make a mint green smoothie, similar to a Shamrock Shake.
I still remember the first time I had a McDonald's shamrock shake during St. Patrick's Day. It was like a thick milkshake but tasted almost like my childhood favorite cookie, the thin mint. A few years ago, I decided to go back to McDonald's and order one to relive those memories. Unfortunately, I was very disappointed. Was this how these shakes always tasted? Did they change the ingredients? Something was off and I wouldn't finish it.
When I was thinking up this recipe, I knew I wanted to recreate the McDonald's classic, but have it actually taste good. I'm so happy with the way this mint smoothie turn out and it's a lot healthier of a version! This smoothie seriously tastes like a shamrock shake!
A couple notes about this Mint Smoothie:
Adding more ice:
The recipe makes a super smooth and thick smoothie. Some times I like adding a little more ice than the recipe calls for and blending on high for a minute or two. This gives the smoothie a super light and bubbly texture...like in the pictures.
Can I use frozen produce in this recipe?
Yes, frozen spinach and a frozen banana will work the eat same! Using frozen produce is a great way to make sure the ingredients are full of flavor.
