    Strawberry Cereal Bars

    No-bake Strawberry Cereal Bars are crunchy and full of strawberry flavor. The perfect back-to-school snack for your kiddos and can even be enjoyed as a quick breakfast or healthy dessert. These bars are gluten-free, grain-free, and refined sugar-free. They require only five ingredients and come together in just minutes.

    How to make this recipe

    1. Line an 8x8 baking pan with parchment or lightly grease with some coconut oil. Set aside.
    2. Combine the cashew butter and maple syrup in a small saucepan and bring to a slow rolling boil.
    3. While the cashew butter and maple syrup are thickening, process the freeze-dried strawberries in a food processor until slightly powdery but some larger chunks remain. Add the strawberries to a medium sized bowl along with the unsweetened Lovebird Cereal.
    4. Once the cashew butter and maple syrup has thickened, add the vanilla extract and stir for about two minutes. Pour the cashew caramel mixture over the strawberries and cereal and mix.
    5. Pour the cereal bar mixture into the 8x8 baking pan and gently press the bars into an even layer. Cover the cereal bars, place them in the refrigerator, and allow them to sit for about an hour. Cut and enjoy!

    How to store

    While I recommend consuming these cereal bars within the first few days, they can be covered with plastic wrap or stored in a glass container in the refrigerator for up to three days. I do not recommend freezing them as they will become soggy.
