Strawberry Lime Vinaigrette is sweet and slightly tart. It is the perfect addition to any summer salad! It comes together in just a few seconds in the blender. The salad dressing is not vegan but the honey in the recipe can easily be substituted with maple syrup for a vegan option.
Strawberry season is one of my favorite times of the summer. I love receiving a pint full of tiny sweet strawberries that were freshly picked. We received some in our CSA the other day and I think my husband and I ate them all before our kids could have one. They won't appreciate them the same way as we would. So when I went to the store the next day, I made sure to stock up for the kids.
A couple notes about Strawberry Lime Vinaigrette:
Adjusting the sweetness:
If you can get your hands on strawberries that are in season, you may not need any added sweetener. I recommend tasting the vinaigrette before adding any sweetener. Strawberry sweetness can vary depending on the time of the year. Adjust to your liking.
Vegan option:
The recipe calls for honey unless using very sweet strawberries. The super sweet ones tend to be ones that are at your local farmers market and were freshly picked. If the strawberries you are using are sweet, don't use honey. To make this vinaigrette vegan, substitute the honey for maple syrup.
Let's talk about oil:
I definitely recommend using an extra virgin olive oil or an avocado oil. I really like how the fresh strawberries are the main event in this salad dressing. Make sure to use an oil that won't over power them.
