This Tropical Smoothie has all the flavors of summer-pineapple, strawberries, banana and coconut. I add a little ginger to the smoothie to add a little spice. The ginger is subtle and is a nice contrast against the sweetness of the fruit.
I can't think of anyone who wants to drink a smoothie in the winter but I have been in need of a Michigan winter pick me up. It's been pretty cold and snowy here lately and the only thing that's getting me through is thinking about summer.

I make this smoothie for my two year old daughter quite often. She's a big smoothie drinker. I will add in cauliflower rice, frozen zucchini, a handful of spinach or kale and some hemp seeds. This is an easy way for me to disguise some good-for-her veggies. Keep in mind this smoothie isn't only for kids! Feel free to add whatever you would if it helps you get in your vegetable servings for the day.

Tropical Smoothie
Ingredients
- 15 frozen strawberries about 2 cups
- 1 cup fresh pineapple, chopped
- 1 small banana, sliced
- 1 small thumb sized piece of fresh ginger
- 1 tsp chia seeds
- ½ cup coconut milk
- ¼ cup fresh orange juice
- 1 cup ice
Instructions
- Place all ingredients into a a blender and blend until smooth, about two minutes
- Pour the smoothie into two glasses, garnish with fresh fruit and enjoy!
